Since 2010, Mexican gastronomy has been declared as Intangible Cultural Heritage of Humanity, since practically in each of the states of the country you can enjoy a wide variety of ingredients and flavors unique in their kind. However, we have taken on the task of collecting some of the best cuisines you can meet with any of the airline tickets to Mexico in hand, where you will enjoy drinks and dishes that will remain forever in your memory.

Oaxaca

If you don´t go to any of its markets it is as if you hadn´t set foot in the city, the market November 20 is known as the “food market” because its premises are practically fondas offering tlayudas with tasajo, enchiladas of mole, yolk bread , chocolate with water, grasshoppers, quesillo and more. But if you’re looking for a touch of innovation, of course without losing the flavor of the typical ingredients, you have to visit Barroco restaurant inside the International Baroque Museum, a space with a sustainable spirit because the menu is prepared with local products and with an artistic touch, since the presentation of the dishes is often related to the exhibitions that are in the place.

If by something is characterized the cuisine of this state is to be abundant, and a place where you will find traditional dishes is La Chaya Maya, where one of the stars is the Tikin xic, consisting of a generous portion of fish fillet stuffed with shrimp, squid and clams, all marinated with achiote broth, wrapped and cooked in banana leaves. On the other hand, if you go in November, then you have to order the Mucbil Pollo, which is basically a tamal prepared with baked golden dough stuffed with turkey and pork, wrapped in a banana leaf, and as a dessert before returning home, it is mandatory to go through a brioche with bread stuffed with cream cheese and a special glaze.

Baja California

The cuisine of Baja California and Baja California Sur is rich and varied, made with fresh and natural ingredients generally produced in the region. In the kitchen, dishes are prepared with fish and seafood such as tuna, marlin, ray manta, clam, shrimp, lobster, oyster, octopus, crab and squid predominate, but you will also find excellent cuts of beef, pork and lamb.
